Our 100% Certified Berkshire Pork from Eden Farms is nothing short of perfection on a plate - tender, juicy and absolutely delicious - every time. Berkshire Pork is the oldest breed of pork in existence today and is raised for the meat’s distinctive color and marbling- two characteristics that make our pork tender and flavorful. St. Louis spare ribs come from the belly side of the rib cage. This particular style is known for when the sternum bone, cartilage and rib tips have been removed which leaves a generally rectangular shape. The texture of pork is influenced by the place and conditions in which the pig was raised and what it was fed.
